Martinotti Method sparkling wine “Lungo”-Brut. Grapes: Pinot Noir. Soil and production area: Oltrepò Pavese: mixed sand, marl and alluvial clay. Harvest time: end of August. Vinification: soft pressing, with static clarification at 10°C, followed by temperature-controlled fermentation with selected yeasts. Sparkling: refermentation at low temperatures in autoclave followed by long aging on the lees. Aging: 6 months on the lees (Martinotti Long Method). Alcoholic strength: 12.5%. Serving Temperature: 8°C. Dosage: Brut. Format : 75 cl. Food pairings: cured meats, fresh and medium-aged cheeses, pizza, fried food, salads, savory pies.
