-Extraordinary because it is the house’s firstborn, its daddy is Tuscan Sangiovese, its mama is Pinot Noir from Pavia. It is nomen omen and it is enough to drink it to realize it. Vinification: In white, through soft and progressive pressing of the grapes. The first fermentation is in stainless steel tanks, the second in the bottle for 24 months. After degorgement it rests another 3 months in bottle. Occasions it makes magical: Picnic baskets. Old wooden chairs. White tablecloths. Bare feet dipped in grass. Tree houses. Swings and somersaults.
-Grape: Sangiovese and Pinot Noir. Harvest: Manual, with rigorous selection of bunches. Palate: Straight, clean, fresh, immediately enticing for another sip. Those in the know perceive berries, flowers, peach, citrus, bread and honey. Run: 2,500 bottles. Category: Bubbles.
