– “Removed” Lambrusco di Sorbara D.O.C. Metodo Classico/Method Ancestrale. Type Red wine, sparkling, dry, obtained by natural fermentation in the bottle, in the presence of yeasts. Winemaking Method: Lambrusco di Sorbara D.O.C. “Rimosso” is obtained from the selection of the best Sorbara grapes harvested exclusively by hand in 15-kg crates. Maceration takes place in a cold press. The first alcoholic fermentation of the musts takes place in temperature-controlled steel vats. After waiting at least six months, bottling takes place. The bottles remain at a constant temperature of 12°C to allow the wine to carry out the second fermentation process and mature on its own yeasts, which remain as a slight sediment at the bottom of the bottle. Description: Ruby color, with a slightly veiled appearance. Nose characterized by intense and rich bouquet of wild strawberry, currant, raspberry, cherry, accompanied by floral notes of fresh rose. On the palate, dry, pleasantly fruity (cranberry, black cherry), acidity well integrated with sapidity. Juicy, pulpy finish, accompanied by a lingering brushstroke of raspberry. -Variety of grapes : Pure vinification of Lambrusco di Sorbara DOC grapes grown in the alluvial soils of the Secchia River. Harvest time: Last week of September.
