Scialatiello di Gragnano PGI – 28 Pasta Makers

The name Scialatiello di Gragnano PGI appears to derive from the combination of the words “scialare” and “tiella,” meaning “to enjoy” and “to fry,” respectively. It’s a pasta shape originating from the town of Amalfi. Made according to the artisanal tradition of Pasta di Gragnano PGI, it’s bronze-drawn to best hold sauces, and slowly dried at low temperatures to preserve all its nutritional and organoleptic qualities. Being an artisanal product, we recommend tasting it several times during cooking, because pasta is like life; it doesn’t require instructions or timing; it’s simply a matter of tasting it to see when it’s just the way you like it.
