Salted Tuna in Brine in a Jar – Adelfio

A product made from fresh local tuna, previously salted and placed in large “tubs” for curing. During the second phase of curing, it is removed, cut into pieces or fillets, and sold in jars, in oil with chili pepper, otherwise just in brine, or in a vacuum-packed bag. It can be used as an appetizer, cut into small cubes (if necessary, desalt it beforehand in running water since it is too salty), seasoned with olive oil, red chili pepper, and a good fresh sweet onion, and perhaps paired with a tomato and cucumber salad that tones down the saltiness.

Another salted tuna recipe is for a delicious peperonata (a dish we call “ghiotta”) . Basically, you cook some peppers and potatoes cut into strips in a pan, along with a generous amount of onion, capers, and cherry tomatoes. Halfway through cooking, add the salted tuna pieces and red chili pepper to taste. Note: Since the tuna is very salty, add only a little salt when cooking the ingredients.
