PRODUCTION TECHNIQUES: Freshly harvested broccoli rabe is used to make turnip greens pesto. After washing them and removing the toughest stems and yellowed leaves, they are cooked in previously boiled water until they become tender. They are then drained, squeezed and left to cool. Once cooled, almonds, chillies, oil, garlic and lemon juice are blended together to obtain a cream. The resulting product is then placed in jars, hermetically sealed, and placed in pasteurization baskets where they are immersed for 15 minutes in water heated to 102°C, until the core temperature of the product reaches 87°C. PAIRINGS: Turnip greens pesto is excellent for seasoning orecchiette, pasta, baked dishes, pizza, panzerotti, etc. HANDLING and STORAGE: Keep away from sources of light and heat. Store the product in a hygienic environment and at a temperature not exceeding 33°C. Do not store beyond the shelf life indicated on the package. The packaging is fragile because the material used is glass, which cannot withstand impacts or excessive static loads. Avoid stacking boxes more than 10 high, bumping them, or knocking them over. If a box is tipped over, check the condition of the packages inside (there should be no cracks, chips, dents in the lid, etc.). If the packaging is damaged, send it for disposal. Once opened, store in the refrigerator at a temperature of +4°C. PACKAGING MATERIALS: The product is packaged in transparent glass jars intended for food use. The lids are made of steel with a food-grade rubber membrane that ensures the container is airtight and prevents direct contact between the product and the metal. VISUAL EXAMINATION: The Turnip Green Pesto has the green color typical of turnip greens. OLFACTORY EXAMINATION: Upon opening, the aroma of turnip greens and lemon juice is immediately noticeable, followed by the aroma of garlic and almonds. TASTE: Particularly strong flavor.
