The following day, the onions so macerated are put into cooking at low temperatures (80°c) for about 2 1/2 hours with the steeping liquid. PRODUCTION TECHNIQUES: After being cleaned, the onions are macerated with vinegar and sugar. The following day, they are cooked at a low temperature with the steeping liquid. When the product has lost all its liquid part, reached a golden color and a gelatinous consistency, the jars are filled. The jam is pasteurized, ensuring the preservation of the product. PAIRINGS: It is a perfect accompaniment to aged or smoked cheeses. It can also accompany various types of meats, preferring savory ones, preferably cooked roasted. HANDLING and STORAGE: Store the product away from light and heat sources in hygienic environments at a maximum temperature of 33°C (93°F). Avoid tipping packages and check the condition of packages if they are tipped over. In case of undamaged packaging, send for disposal. After opening, store the jar in a refrigerator at +4°C. PACKAGING MATERIALS: The product is packaged in clear glass jars intended for food use. The lids are made of steel with a food-grade rubber membrane that ensures the package is airtight and prevents direct contact of the product with metal. The packaging material is reusable and contains no plastic. The packaging is recyclable. Gelatinous, dark purple, almost black in color. Upon opening, the scent of onions is immediately noticeable, later the smell of vinegar and the delicate smell of bay leaves stand out on the nose.
