We respect the traditional methods of olive harvesting, patiently monitoring the ripening on the branches of our silvery olive trees. Prolonged ripening could alter the color, texture, fragrance and organoleptic qualities of the olives. For this reason, we wait until the olives reach a slight pink coloration of the drupe. In order to keep all the characteristics of our organically grown olives unaltered, we strictly respect the milling time, which takes place within a few hours of harvesting. This allows us to obtain an oil of the utmost purity, with a beautiful straw-yellow color, an intoxicating aroma and a taste that preserves the characteristics of the olives used. The olives are pressed in our mill to ensure a higher quality of the evo oil produced on the farm.
