-D.D.R. Lambrusco di Sorbara Spumante D.O.C. Metodo Classico. Harvest 2015. Winemaking method: Lambrusco di Modena Spumante D.O.C. is obtained from the selection on the vineyard of the best bunches of Lambrusco di Sorbara grapes, harvested strictly by hand and vinified in purity. Soft pressing takes place according to strict fractionation criteria. The portion of must chosen for vinification undergoes clarification, followed by primary alcoholic fermentation in temperature-controlled steel vats. After aging for at least eight months in the vats, frothing and bottling take place. The wine undergoes secondary fermentation in the bottle, following the traditional method. The bottles are stored at a constant temperature of 12°C for a period of 84 months. After rémuage and subsequent dégorgement, the liqueur d’expédition is added and the wine is packaged. Description: Deep ruby red color. Broad nose characterized by a riot of jammy red fruits (cherry, wild strawberry, currant, raspberry), then floral sensations of dried rose and peony. It finishes with notes of underbrush, myrtle and cinnamon. The palate is enveloping, full, rich and juicy, caressed by a beautiful fruity texture. Excellent balance between freshness and savoriness.
