
Description of the wine
Grapes: 100% Sangiovese Grosso from the “Vigna del Lago,” located near the winery, 270 meters above sea level, on the northern slopes of Montalcino. Grape selection during harvest is extremely rigorous to ensure complete polyphenolic ripeness. Production techniques: Traditional fermentation, as was once done in Montalcino (with temperatures, in the final stage, reaching 30°C for several days). Once fermentation is complete, the pomace macerates on the wine for 15–30 days to achieve a natural softening and lightness of the tannins. The wine ages exclusively in 50-hl oval French oak barrels for 30 months. It takes its name from the lake that surrounds it and plays a key role in the microclimate of this area; the soil is a continuous alternation of clay and streaks of very fine marl.
Characteristics of the wine
Upon tasting, it displays a light garnet red with very bright ruby-orange highlights. The nose reveals hints of morello cherry, cherry, and blackberry, supported by a tertiary texture of leather, tobacco, and balsamic spices. Hints of ginger and nuances of rosemary make the bouquet complex and captivating. The palate opens with tannins, which, while revealing their sweetness, suggest a few more years of aging before uncorking. Pure, precise, and long on the palate.
Recommended pairings
A traditional Tuscan wine from the Val di Suga winery, perfect for pairing with flavorful, full-bodied dishes, such as red meat or game. Excellent with spit-roasted thrushes. Serve at 20°C in a wide glass.
