Calamarata di Gragnano PGI originates from the Neapolitan tradition, but quickly spread throughout Italy. Its name comes from its shape, which resembles the squid rings typically found in fried fish. It’s made according to the artisanal tradition of Pasta di Gragnano PGI, bronze-drawn to best retain sauce, and slowly dried at low temperatures to preserve all its nutritional and organoleptic qualities. Being an artisanal product, we recommend tasting it several times during cooking, because pasta is like life; it doesn’t require instructions or timing; it’s simply a matter of tasting it to see when it’s just right for you.
