-“Rimosso” Lambrusco di Sorbara DOC Classic Method/Ancestral Method. Type: Dry, sparkling red wine, obtained from natural fermentation in the bottle, in the presence of yeasts. Vinification method: Lambrusco di Sorbara DOC “Rimosso” is obtained from a selection of the best Sorbara grapes , harvested exclusively by hand in 15 kg crates. Maceration takes place in a cold press. The first alcoholic fermentation of the musts takes place in steel vats at a controlled temperature. After waiting at least six months, the wine is bottled. The bottles remain at a constant temperature of 12°C to allow the wine to complete its second fermentation process and mature on its lees, which remain as a light sediment at the bottom of the bottle. Description: Ruby color, slightly hazy. Aroma characterized by an intense bouquet rich in hints of wild strawberries, currants, raspberries, and cherries, accompanied by floral notes of fresh rose. On the palate, dry, pleasantly fruity (cranberry, black cherry), acidity well integrated with the savouriness. Juicy and pulpy finish, accompanied by a persistent brushstroke of raspberry.

Grape Variety: Vinification of Lambrusco di Sorbara DOC grapes grown in the alluvial soils of the Secchia River. Harvest Period: Last week of September.. Alcohol content: 11.5% vol. Serve at 10°C.
