Superior extra virgin olive oil obtained directly from olives and solely by mechanical means; 100% Italian cold-pressed organic extra virgin olive oil; we offer unfiltered oil, which can be filtered upon request. We respect traditional olive harvesting methods, patiently monitoring the ripening process on the branches of our silvery olive trees. Prolonged ripening could alter the color, consistency, aroma, and organoleptic qualities of the olives. For this reason, we wait until the olives reach a light pink color on the drupe. To preserve all the characteristics of our organically grown olives, we strictly adhere to the milling times, which take place within a few hours of harvesting. This allows us to obtain an oil of the utmost purity, with a beautiful straw yellow color, an intoxicating aroma and a flavor that retains the characteristics of the olives used. The olives are pressed in our mill to ensure a higher quality of the extra virgin olive oil produced on the farm. TRAINING SYSTEM AND PLANTING TYPE: Pantaleo Agricoltura has three different planting systems: centuries-old trees spaced about 20 meters apart, slightly lowered at the canopy to facilitate harvesting. Traditional intensive with a 6*6 planting pattern. HARVEST PERIOD: From October to February-March depending on the year. HARVESTING TECHNIQUE: The olives come from internal olive groves, both from centuries-old trees and from traditional intensive systems. Harvesting is done using mechanical methods such as a tilting umbrella for smaller trees and a knocker for centuries-old trees. The oil is extracted using a two-phase continuous cycle, followed by natural decantation and racking. EXTRACTION SYSTEM: Two-phase continuous cycle – Natural decantation and racking. FILTRATION: Unfiltered, with the option of filtering. CERTIFICATIONS: Organic Farming. Bioagricert: Q60R, ITBIO007 certified operator. The oil is characterized by an intense light green color with golden yellow hues. Its flavor is sweet and slightly spicy, with a subtle tomato aftertaste. This combination makes it perfect for those who prefer to avoid excessively spicy flavors. The aroma is delicate, ripe, and rich, offering a balanced, rounded flavor. The oil is stored inside the mill in dedicated steel tanks; store the product away from light and heat sources in hygienic environments. Avoid tipping the packaging and check its condition if it is knocked over. If the packaging is damaged, send it to the waste disposal facility.
